On today's Wild Thyme, Allison Davis and April teach us how to make meatless sloppy joes.

Here, in the wild time kitchen over in shops.

I'm hanging out with my friend april from april may health.

And it is a meatless monday.

April: okay.

Allison davis: yeah, we're doing a meatless monday and this is one of my favorite foods when i was growing up.

April: sloppy joes?

Allison davis: slop, slop, sloppy joe's.

Yep.

I just had to do that.

But what did you say that you called them at the kid?

Because she said she couldn't remember what the name was.

April: for some reason it got programmed in my head that it was messy boys.

Allison davis: so you would say- april: i would say, "yeah, we're having messy boys."

Allison davis: i hope my kid never comes home and says, "mom, can i have a messy boy?"

April: you might marry one someday.

That's what you'll tell her.

Allison davis: yeah, that might be true.

All right, but this is meatless sloppy joe's.

April: yeah, it's lentils.

Allison davis: okay, cool.

April: instead of the meat.

Allison davis: so let's get into it.

April: yeah.

Let's do it.

Allison davis: what are we going to do?

April: now, i make things simple and fast.

Allison davis: i like it.

April: so this particular recipe, - allison davis: yeah, c1 3 you're the instant pot queen.

April: i'm a instant pot.

Yeah, i put it on saute.

Allison davis: okay.

No oil.

April: no oil.

Vegetables have all that water that they release so it's super easy - allison davis: so you really don't have an issue with the sticking?

April: no, not at all.

And if it does start to stick more than you want, a splash of water or a splash of no oil added veggie broth.

Allison davis: okay.

April: and then i'm going to put some red bell peppers in there.

Let those saute around.

Allison davis: i was shocked.

Yeah, i was shocked actually when i had a quart of chicken broth and looked and it said, "may contain soy or soybeans," and- april: you got to always read the labels.

You never know what's in that stuff - allison davis: it's so true.

April: now i'm just going to rock and roll and throw everything else there.

There's a little bit of salt.

Allison davis: so onions, peppers, salt.

April: yeah, we've got a little bit of soy.

I used the tamari though because you know- allison davis: gluten free.

April: i'm cooking for other people a lot of times and they're wanting to stay away from gluten even though they're, you know, if you have a sensitivity, yes.

But as a general rule, gluten's not a problem.

I eat it.

Allison davis: and if you had a soy sensitivity.

You could go with the coconut aminos.

April: you could.

Absolutely.

And then this is a little bit of a vegan worcestershire.

Worcestershire typically has a little bit of animal product in it.

So that's a vegan version.

Two scoops of brown sugar just to cut the acidity of the tomatoes a little bit.

Then we've got... allison davis: you can actually go with carrots too.

April: making all this noise with this stirring.

Allison davis: no, it's okay.

But carrots actually help cut the acidity because of the sweetness of the carrots.

Yeah.

April: absolutely.and this is mustard, dijon mustard.

Scoop it in there.

Allison davis: that looks like a whole grain, right?

April: yeah.

Allison davis: with the seeds.

All right.

April: yep.

And then this is some chili powder.

Allison davis: love.

April: dump that all in there.

Allison davis: you mean there's no smoked paprika in this?

April: not yet.

Allison davis: it's my favorite.

April: this is fire roasted diced tomatoes.

Now i like to get a salt free.

I wasn't able to grab one real quick.

Neuro blend.

Neuro .

M-u-i-r.

Allison davis: yes.

April: is one that you can find.

But this one is going to have this salt in it.

But typically i don't want a lot of added salt, - allison davis: like the fire roasted because that's going to give it a little bit more kind of char and smoke and depth.

Yep.

Yep.

April: and then the lentils we're going to do... now i'm using the red lentils today.

You can use the brown or the green, they're a little firmer in texture.

So i'm going to cook these not quite as long because they will get - allison davis: so red cooks a little faster.

Is that right?

April: yeah, because it's softer.

Yeah, absolutely.

And then i thought, and here's my rule too.

If you don't have browns in the pantry but you had reds, let's get on with it.

Because if we don't cook- allison davis: use what you have.

April: and get it on the table, you're going to be in the drive thru.

Allison davis: yeah.

Use what you have.

And is there something in this here?

April: water.

And that is some rice vinegar.

Allison davis: rice vinegar.

Okay.

If you didn't have rice vinegar, obviously you could do like maybe apple cider vinegar or even just white vinegar.

April: that's right.

So now you've got this in the pot ready to go.

And i'm going to set it for the manual setting for about six minutes.

I'm going to put the lid on.

Allison davis: so manual on the instapot, six minutes.

Is it?

April: is this going to be pressure cooking.

I put the lid on, which i think we have the lid somewhere else.

I don't know where.

Put the lid on and it's going to run down that six minutes and it'll be ready to go.

You serve it on your sandwiches.

Allison davis: six minutes, that's it?

April: that's it.

Now if you use a firmer lentil - allison davis: this is dinner in 10?

April: that's right.

If you've got the firmer lentils, then you're going to take a little bit more time, but one of the tricks to, to cut down on time, it's going to take a little bit of time for the pressure to come up.

So you could put boiling water already boiling in there and then seal it up and it'll come to pressure that much faster.

Allison davis: awesome.
