c1 3 bath, where you will always cook in style. allsion: welcome back to midday kentucky. i'm chef allison at wild time cooking, and i know you guys love watching me cook with troy and lisa. but, today i brought some friends into the kitchen and i am with daniel marlowe of whiskey bear. if you haven't been out to the summit, you definitely need to check this place out. this is a great bar, and you're the owner of whiskey bear, and we're going to make some cocktails today, right? daniel marlowe: yes, my wife and i. thank you very much. we're looking forward to this. allsion: yeah. thanks for being here. daniel marlowe: absolutely. allsion: what are we going to make? daniel marlowe: we're going to make two of our spring/summer cocktails. these are on our cocktail list at whiskey bear. these are two of my favorites for warmer weather. one of these is great, especially moving into derby season, which was have coming up. allsion: yeah, i noticed you brought one of my favorite things on the planet, which is ancho reyes, and i have to say i'm a big fan of that. so, i'm excited to see ... daniel marlowe: fantastic. it's little known, unfortunately, but it is wonderful. yeah, we'll actually start with that one then. allsion: okay. daniel marlowe: the first one were going to make is what we call our fozzie bear. it is basically a classic daiquiri made with ancho reyes, which is an ancho chile liqueur, very similar to a rum, but with a little bit of heat to it. it's not over the top, but a really, really fun one to play with. allsion: and, if anybody ... if they know me, i love anything with a little bit of kick to it- daniel marlowe: me and you both. absolutely. allsion: so, that's where i go. daniel marlowe: c1 3 we'll make this one first. i'm gonna ...recipe. allsion: you all hear that? he's eyeballing it. that's the way i cook, so- daniel marlowe: ancho reyes chile liqueur. a little bit of fresh- squeezed lime juice. allsion: okay. daniel marlowe: then, equal parts simple syrup, which is essentially just 50-50 sugar water- allsion: that's exactly right. daniel marlowe: and, it's that simple. so, we're gonna put that in a shaker. allsion: so, ancho reyes, lime juice, and simple syrup. daniel marlowe: yep, fresh lime juice and simple syrup. and, it really is important to do the equal parts for a good daquiri. that way, it balances the acid and the sweet, and really plays well with the spice of the rum. allsion: mixology is just like cooking. daniel marlowe: oh, very much so. allsion: you're trying to find balance. you're trying to find flavors and work them together, and- daniel marlowe: absolutely. allsion: yeah. okay. daniel marlowe: so, we'll shake this up. allsion: i'm excited to try. daniel marlowe: alright. and, anytime you're shaking a cocktail, the ice melt is actually a really important part of balancing out that cocktail, as well. so, we always tell our people to shake until you see just a little bit of ice on the outside of the shaker tin, and that's when you know it's properly chilled and you're getting enough of the ice melt. so, we serve this in a little coup glass. allsion: yum. daniel marlowe: and, then, just a sliver of lime on there as a garnish. and, if you serve this to your friends at a cocktail party, they will be very, very pleased. allsion: gorgeous. daniel marlowe: feel free to try it, if you like. allsion: i will. now, whiskey bear is in the food barn at the summit. and, you were telling me that the summit is open container? daniel marlowe: well, sort of. it's the first full- time entertainment district in lexington. allsion: right. daniel marlowe: so, you can actually take a drink from whiskey bear and several other of the places in the summit, take it and walk around with it while you shop. we've got a lot of really fun outdoor events going on this summer with some live music, some different ... they've got a big sip and stoll event. so, you'll be able to walk around with a cocktail or a glass of wine, and enjoy being around the summit. allsion: and, you guys have live music? daniel marlowe: we do live music every saturday night inside whiskey bear, which is fantastic, and come summertime, we're also going to have some live music on some friday nights out on our back porch, the patio area, which is gonna be really fun. allsion: okay. so, you've got one more cocktail you wanna show us?
