I should have more ballistae up on towers, raining bolts on the incoming Saracens. That didn’t happen much during the actual Crusades, but it makes sense in a strategy video game that’s focused on building impregnable fortresses and then finding ways to burn them down. But I still want to repel the siege using mostly archers because it fits with my vision of history and creates a decent gameplay challenge. Maybe I need a few knights, although they are expensive to create, to simply target siege engines, even if it's mostly a suicide mission. Or maybe I should make my economy a little more efficient and use the extra resources to simply make sure I have more units and even more walls.
